Our Team's Favorite Recipes


I have a new favorite dish I'd like to share. It's amazing for the Winter season. I LOVE to cook in my Crockpot. You can get it all in the night before, start it before you leave for work and come home to an amazing meal at the end of the day.

Here is my version of Homemade Chicken & Dumplings.

Step 1: Mix the following ingredients in the Crockpot.
3 cans of Cream of Chicken Soup (I use Fat Free)
1 Large container of Chicken Broth (I use Fat Free)
1 Tablespoon of Garlic
2 Tablespoons of Margarine
Fresh Thyme (about a Tablespoon)
Salt (I use Johnny's Seasoning Salt) & Pepper to taste
Red Pepper flakes because I like it spicy!

Step 2: Mix in the following items
6 Red Potatoes with the skin, diced
1 package baby carrots, diced
1/2 onion, diced
Celery, diced

* If at this point you don't like the consistency of the soup you can always add in more Cream of Chicken soup or Chicken Broth. As the veggies cook they will add in some extra liquid. I like mine hearty and thick.

Step 3: Place 6 chicken breasts into the mixture and make sure they are covered by the liquid. (I use frozen ones)

Step 4: Cook on High for 5-6 Hours.

Step 5: Shred Cooked Chicken
Remove all the chicken breast from the Crockpot after 5-6 hours and shred them. They will just fall apart at this point. This is also a great time to season the mixture with anything else you can think of and/or change the consistency with more Cream of Chicken soup or broth. Return the shredded chicken to the Crockpot and mix.

Step 6: Add the Dumplings
Take 2 cans of Bisquick biscuits (they are in the refrigerator section) and cut each biscuit into quarters. Roll each into a ball and place in the Crockpot. Make sure you get them coated in the mixture but then they will pop up to the top. This is OK and they don't need to be covered in the mixture to cook. Put the lid on and cook another 1-2 hours on High.
